Mild Beef Curry - Ideal for a disabled person to do, very easy. In the time it took me to boil the kettle, this was in the slow cooker. So this is for 4, I did 2 small packs of diced beef. 1/2 jar Pataks mild curry paste, i prefer the paste, as its just the spices and oils, nothing else, and makes your curry more authentic, they do loads of different pastes as well, Tikka, korma etc. As I was doing beef curry I just got the mild curry paste. A jar will last you two meals. Then I used fresh prepared vegetables from asda (no chopping or peeling) , i bought a chopped onion already diced, sliced carrots, fine beans i chopped in half, and baby sweetcorn i chopped in half. 1 tin of chopped tomatoes a sachet of pataks coconut slice (you get 4 in a box, but only need one). salt and pepper. beef oxo cube and using the tin from the tomatoes a tin of water. A good stir, on low, for the rest of the day. Self steamed rice. Never been able to cook good rice? Heres my easy way to cook rice. A normal sized mug. Use normal rice NOT EASY COOK RICE. 1/2 cup per person. then its one mug of boiling water to each 1/2 a cup, so basically twice as much water to rice. Bring it to the boil add salt. Once boiling, SWITCH OF THE HEAT! Stir well, then add a sealed tight lid, and leave on the hob for 20 minutes. You will have perfect rice, all fluffy.
