Mock Guacamole INGREDIENTS Mock Guacamole 2 cups frozen peas 1/4 cup onion, finely chopped 2 garlic cloves, pressed 2 tbsp fat-free sour cream 1 tbsp lime juice 4 drops hot pepper sauce 1/2 tsp salt 1 plum tomato, seeded and chopped 1 tbsp fresh cilantro, snipped 7 8-in. (20-cm) fat-free flour tortillas DIRECTIONS 1 Cook peas in Small Micro-Cooker® according to package directions; drain. Finely chop peas and onion using Food Chopper. Press garlic using Garlic Press. Combine peas, onion, garlic, sour cream, lime juice, hot pepper sauce and salt in Classic Batter Bowl; stir with Skinny Scraper until well blended. Chop tomato using Utility Knife. Snip cilantro using Professional Shears. Stir tomato and cilantro into pea mixture. Cover; refrigerate 1-2 hours to blend flavors. 2 Preheat oven to 400°F. Cut each tortilla into 8 wedges using Pizza Cutter. Arrange wedges on Rectangle Stone. Bake 6-8 minutes or until lightly browned. Remove wedges from Stone; cool completely. Serve with guacamole.
