Motichoor laddoo ! Not anymore a forte of only a professional cook! Anybody can prepare this sweet easily by following my recipe. Here it is : You need perforated laddle meant for mkng laddoos. Ingredients: For batter - 1c besan flour, 11/2tbsp fine sooji, 1tsp melted ghee, saffron colour, a pinch of bkng powder and water. Method- sieve besan and bakng powder together. Add rava and other ingredients. Mix in water slowly to bring batter to dosa consistency. Heat oil in a kadhai and using perforated laddle rub in batter over oil to get small round boondis. If your boondis turn flat, it means batter is thin. Add besan and adjust consistency. You have to hold laddle an inch higher than oil while rubbing the batter to get round boondis. Another tip is to cleanly wipe laddle after each use. Remove boondis whn they turn light gold and strain over absorbant paper. For syrup- 1c sugar, 1c water, cardomom. Mix sugar and water. Boil to bring it to one string consistency( 210F on candy thermometer). Switch off flame and add cardomom. Dry fruits- fry dry fruits like cashew and dry grapes in little ghee. Keep aside. Keep aside few tea spoons of powdered sugar. Assembling laddoos- pour warm sugar syrup over fried boondis. Take this mixture in a mixer jar and pulse once or twice. Do not over do this as it may turn mushy. Take out in a bowl. Add fried cashews, dry grapes. Sprinkle powdered sugar. Rub hands with ghee and start making laddos. You may make coloured boondis for their appeal. Enjoy!
