Muccellati (Easter Bread) Contributor: Mary Silletta Oliver (Dans mother) Personal Notes: I always made Julianna the infant Jesus muccellate every year by braiding the bread in a straight piece and placing an egg near the top. The egg represented Jesuss head and the braid was Jesus in a swaddling cloth. -Mary Note: If lard scares you, you can vary the recipe. You can use 6 sticks of butter, and let the dough rise twice, once in a 5 gallon bucket & again in the bread pans. If you arent an anise fan you can use a combination of almond extract, orange zest, and raisins and it will still be wonderful. This is heavy, rich and dense dough. If using a Kitchen Aid stand mixer, divide the recipe by 4....Danny ________________________________________ Category: Breads, Rolls & Muffins Ethnicity (if any): sangiovannese ________________________________________ Ingredients: • 10 lbs. (33 C) Robin Hood flour, plus additional 2 1/2 C, if needed • 1 lb. lard; plus 1 stick of butter • 5 T instant yeast (not rapid rise), or 2 (2 oz) cakes of yeast • 24 large eggs; organic would be better • 1/4 C, plus 1 T, salt • 3 t anise seed • 6 drops anise oil • 4 C sugar • 2-3 C ( or as much as needed) tepid water (too hot will kill yeast) • 6 drops of yellow food color ________________________________________ Directions: Mix together the salt, sugar, flour, and anise, and set aside. Put the eggs in an 8qt. stainless bowl; puncture yolks and whisk all together. Heat lard (melt) in microwave at setting 3 for 3 minutes. Add lard to eggs along with 1/2 C of warm water; whisk until blended. In separate bowl, add 5 T instant yeast (NOT RAPID RISE) to 1 C warm water, or cake yeast dissolved (break up yeast) in 1 C warm water; mix with a fork and let it bubble. Mix together the yeast mixture, egg mixture, and flour mixture. Drizzle in water as needed. Dough will be wet. Knead until gluten forms...for about 6-10 minutes; Let rest 1/2 hour. Cut into 22 equal size sections for 11 loaves of bread. Roll 2 pieces of dough lengthwise, intertwine, like a platt and pinch ends together. Place into greased pans or use parchment paper. Remember to let rise in only one time in the pans; Grandma Silletta did not let it rise twice. Bake at 300 for 35-40 mins until golden brown. ________________________________________ Number Of Servings: 11 loaves Preparation Time: 3-4 hours
