My 1st attempt at sio bak, roast pork! Super juicy n crispy! Preparation: 700g pork 5 1tsp spice powder+1/2tspsalt +1tsp crushed roasted garlic+ dash of pepper 1tsp shaoxing wine For the rind: Rice wine1dsp+1/4tspSoda powder 1tsp salt Scrape the pork rind with knife to get rid of dirt n hair. Blanch the rind in hot water for 10min. Poke with sharp fork or needle as many X as possible. Dap dry the rind. Pat the rice wine solution & salt onto rind till everything absorbed. Rub the 5spice mixture and onto the meat.. Avoid the rind. Wrap the meat only, leave the rind facing the top uncovered in the fridge for 3hr. Cooking: Remove pork from fridge n rest outside for 15min, preheat AF 5min at 160deg. AF pork with rind facing up at 160deg for 30min. Then 180deg for another 25min, 200deg 5min. Leave roast pork to cool n drip the juice away in a bowl. Serve with good quality dark soya sauce.
