My favorite kind of day is new recipe testing day, which coincidentally, is my staffs favorite day as well! I made a Pain Perdu with Challah Bread where I scooped out 3 holes, and stuffed with an egg yolk in the middle, bacon and Havarti cheese on the sides. Just before I took it out of the oven, I added a little more bacon and scattered a little more Havarti over the top until melted. I then made maple butter to drizzle over the top. My assistants, Lori & Crystal, gave me 2 thumbs up, so that means my guests will be served my Stuffed Pain Perdu in the morning!
