My first attempt at Bread making...tiring for non baker like me but totally loved the yummy buns. Source - This is recipe from you tube cooking channel called Cooking with Dog) Pls do check video once before attempting the recipe. Melopan (Japaneese Buns) All Purpose flour – 140 gms (plus more for dusting) (makes %) Milk powder - 1 tbsp Instant yeast - 1 tsp Salt - 1/2 tsp Water - 1/3 cup (room temperature) Egg - 1 large (beaten) Sugar - 1 tbsp Butter - 25 gm (room temperature) For the Cookie dough - All Purpose flour - 1 1/3 cups Baking powder - 3/4 tsp Salt - 1/4 tsp Butter - 60 gm (room temperature) Sugar - 1/3 cup (if you like it less sweet, use 1/4 cup) Egg - 1 large Vanilla extract - 1/2 tsp lemon zest - 1 tsp Castor sugar or other large granulated sugar - to coat on top Bun - Add bread flour, sugar, salt, dry milk, and yeast. Add water and knead for a few minutes. If the dough is too dry, add water as needed. Add butter and cover with dough. Then proceed to knead again for a few minutes. Place the kneaded dough into a bowl greased with butter. Cover with plastic then set aside in a warm area. Allow it rise for an hour. Cookie Dough - Add butter, sugar into a bowl and mix with an electric beater. Beat well, add egg slowly, Mix the cake flour and baking powder in a bowl, then fold the flour mixture into the egg mixture until it becomes doughy. Chill for 30 mins. Split the pastry dough into 5 pieces, place on parchment paper, cover with plastic wrap, and then refrigerate for at least 30 minutes. Flatten it down into a circle big enough to cover the bread dough abt 3 inchs. Cover the bun balls evenly on the top. Cover bun balls with cookie dough, rise again for 20 mins and bake 35 mins at 170 C (sprinkle sugar before baking)
