My moms recipe for Portuguese Kale Soup 2 lbs bottom round beef 1/2 lb chourico 3 to 4 small turnips 1/2 c green split peas 2 large diced potato 1 head of cabbage (chopped) 2 or 3 bunches of kale (chopped) 2 cans of cannoli beans (unstrained) 1 teaspoon Pimenta Moida (Portuguese Red Pepper Sauce) 8 -10 cups of beef stock 5 carrots (sliced) 1cup macaroni 2 1/2 tbs salt Black pepper to taste In a large pan combine meat, chourico, split peas and turnips, water, salt and pepper. Bring to boil, reduce to medium, cover and cook for one hour or until meat is cooked. Remove turnips and blend, mix back into liquid. Add potatoes, carrots, crushed red pepper, cabbage and kale for about 15 to 20 minutes. You then add the macaroni and the beans... Cook for 5 minutes. If you choose to use a pressure cooker, cook meat, chourico, split peas, turnips and beef broth, salt and pepper for about half hour under pressure.... Serve with Papo secos (Portuguese Rolls)
