My typical dinner at the moment. Homemade salsa (this ones a few diced grape tomatoes and one of those little white onions marinated in olive oil and zest, juice of one lemon, seasoned with salt, pepper, ground coriander seeds and mustard seeds), served on half a baby cos lettuce, a small avocado and a few cubes of cheddar. Its light on the protein because by the time I get home from work after stopping for groceries, go for a run and then shower its after 8pm. I compensate by making lunch my main meal of the day: usually a similar salad with a larger serving of protein (I.e. Chicken, fish, falafel or meat) and then have about three pieces of toast with avocado at 4pm so I have energy for my run. Stick that with fruit and oats for brekkie, and you have yourself a killer summer diet thats delicious, full of 5+ a day (and then some), totally filling and satisfying and absolutely figure friendly. Boosh! I love summer.
