NDN SPICEY VENISION SAUSAGE Ingredients: 3 lbs deer meat 1/4 c bacon drippings 1 c minced onion 1 c parsley, chopped 1 tsp butter 3/4 tsp coriander 1 tsp oregano 1 tsp cayenne pepper 1 tsp black pepper 1/4 tsp cumin salt to taste Directions: Grind deer meat with coarse blade Add parsley and onion, mix well Add remaining ingredients and blend well, regrind mixture Divide mixture into 12 parts, roll each section into 2 1/4 inch X 5 inch patties Fry in oil or barbecue until golden brown. Be sure middle is done! Serve with Frybread or Wild Onions & Eggs!
