Nyonya fish sambal/chili gravy. Slice 1 medium size bawal hitam/black pompret, mix with 1/2 tsp kunyit/turmeric powder, 1 tsp rice flour and 1 tsp corn flour. Deep fry, remove and keep aside. Leave 3 tbsp oil in the same pan/wok, fry blended chilli mixture (5 red chilies, 1 lemongrass, 1/2 inch galangal/lengkuas, 1 inch fresh turmeric/kunyit hidup, 1/2 inch ginger, 5 shallots, 5 garlic and 1/2 inch roasted belacan/shrimp paste) till aromatic. Add 1 large sliced tomato, 1 small piece palm sugar and salt. Stir and pour 1/2 cup water. Simmer, add fish, gently stir and off the heat. Combine in 1 sliced daun kunyit/turmeric leaf.
