OK, got those white chicken enchiladas in the oven. Recipe ran around FB a few days ago. I can already tell you that the recipe should say 3 cups of shredded cheese and 2.5 to 3 cups of chicken. I also used about a cup of med standard red salsa in the chicken cheese mixture and added the green chilies to the chicken mixture rather than the sauce. Well se how that goes. The chicken just seemed tooooooo plain and I think Im going to pine for some cumin in there. Almost dinner time and tme for another hard cider.
