OK, so we disagreed a bit on the pineapple jello!! Heres something I threw together tonight, and it was awesome. If you try it, let me know what you think. White Bean Queso 1 can great northern beans, rinsed and drained 2 T. butter or bacon grease 1/3 block cream cheese (low fat is fine) 1 1/2 c. grated cheddar cheese 1/2 c. salsa, more to taste 1 t. garlic powder 1/4 c. chopped pickled jalapenos (optional) Over medium heat, melt butter in medium size skillet. Add beans. With a fork, mash the beans until they have a very smooth consistency. Add cream cheese and grated cheddar to skillet. Stir until mixture is smooth. Stir in the salsa and garlic powder. Heat thoroughly. Remove from heat, and serve with tortilla chips or Fritos. I thought this was a nice twist on the regular queso that I make or our bean dip recipe. Didnt take a pic, and Im not much of a food photographer anyway. :D
