OK, some of you might know that Ive been doing the eat-to-beat diet since early February, when I had a small melanoma cut off my leg. While I will hopefully never have to deal with cancer again, and Im not fighting spreading cancer, I have chosen to prevent it by eating and drinking only immune-boosting foods. Ive cut out all processed foods and anything with any kind of sugar or high fructose syrup added. SO I said all that to say this...I REALLY REALLY love it when I find a food or recipe that helps cure an occasional craving Ill get for something I once used to eat...like when I get a sweet tooth or the munchies for potato chips during a movie. For the munchies, weve discovered plantain chips (Inca Chips brand is a really good one, but could easily make them from plantains from Winco). They are amazing...not sweet like banana chips...they have more of a potato chip effect with salt added. For a sweet tooth snack, Ive experimented with several combinations, using everything from sweet potatoes to apple juice to bananas to unsweetened yogurt. SO, with that, I have to share the combo I just stuck together... Reeses Mousse: 2 tablespoons of Adams peanut butter (I use crunchy for the texture) 1 tablespoon of coconut oil (healthy butter substitute) 1 1/2 tablespoons of cocoa powder 1 5.3 oz Chobani Greek Vanilla Yogurt (no sugar added) Stir it well and it fluffs up like chocolate mousse. It will surprise you that there is no sugar added. Enjoy!
