Oh snap heres another one..... **A 2nd Easy & Fantastic Homemade Energy Bar** Actually, this one is very similar to the one I posted yesterday. Think of it as another flavor of the same kind of bar ;) I had my pans out and my ingredients spread all over the counter Saturday afternoon, I figured I might as well make another batch! {My friends are saying, who is this person?} I know, I am stepping out of my comfort zone, and just like what usually happens when we do that, Im realizing that it wasnt as hard as I thought! ;) So just to recap from last post, this recipe is inspired from the Glo Bar recipes from the blog Oh She Glows. They not only taste amazing, theyre raw/no bake and free from gluten, oils, soy, and refined sugars! BOOM! The Recipe Ingredients: 1/2 cup of pecans, finely chopped (even got out my fancy chopper) 1 1/2 cups gluten-free rolled oats 1 1/4 cups rice crisp cereal 1/4 cup pepitas 1/2 cup of raw almonds (I like them whole, but you can chop) 1/4 cup dried cranberries (you can order unsweetened from amazon or vitacost, or find them in health or whole food stores. Or just know that if you use sweetened ones youll be adding a small amount of refined sugar :) No judging here! Just FYI ;) ) 2 tablespoons flax seeds 2 tablespoons chia seeds 1 teaspoon ground cinnamon 1/4 teaspoon sea salt 1/2 cup, plus 1 tablespoon, brown rice syrup 1/4 cup almond butter or peanut butter 1 teaspoon pure vanilla extract Directions: 1. Preheat oven to 300 degrees. Line a 9x9 inch or 9x13 baking pan with parchment paper, covering the bottom and sides (best if you have one going each way, but you could get away with one sheet) 2. Spread the pecans evenly on a cookie sheet and toast in the oven for 10-12 minutes until lightly brown. Set aside to cool. 2. In a large bowl, combine all of the ingredients EXCEPT the last 3 (the rice syrup, nut butter, and vanilla). Make sure you stir in those pecans as well. Mix. 3. In a small sauce pan, stir together the brown rice syrup and nut butter until well combined. Cook over medium heat until the mixture softens and just starts to bubble. Dont let it bubble for long, it will quickly start sticking to the bottom and burn! Remove the pan from heat and stir in the vanilla. 4. Pour this mixture over the dry mix in the bowl. Stir until everything is well coated with the wet mixture. 5. Dump the mixture into the lined pan, spreading it into an even layer. You can wet your hands slightly and press the mixture to even it out, or lay another piece of parchment paper on top and roll over it with a can or press down with something flat. When theyre nice and firm they hold together better. I would also press down around the edges, to really get it in there nice and tight. 6. The pan goes in the freezer, uncovered, for about 10-15 minutes or until they feel firm. I left mine in for about 10 minutes, but next time I think Ill wait just a bit longer. I think thats why they were a little crumbly around the edge. (Doesnt take away from the taste though!) 7. Use the parchment paper to lift the whole bar out of the pan, and place it on a cutting board. With a pizza roller (or serrated knife), slice the square into 6 rows and then slice them in half to make 12 bars total. 8. Wrap the bars individually in plastic wrap or foil, or in individual baggies. Place them in an airtight container in the fridge (good for up to 2 weeks) or in the freezer (good for 1 month). If you didnt want to wrap them, Im sure you could just stack them in that air tight container, in the fridge anyway. If you try it that way, let me know how that goes! ;) Be brave and adjust the recipe to fit to your liking! If youre like me, it takes courage to deviate from a recipe, ha!, but Im working on that!!
