Ok. ..I need some expertise here...I am making my daughter a tiered cake/cupcake Birthday cake for her 10th Birthday party thats tomorrow. Top tier is New York Cheese cake (her favorite)....topped with Cake Mate cupcake icing. It is in the freezer as her party is tomorrow near noon. Not sure if it can be freezed but dont want it to melt. I am making Chocolate and Vanilla cupcakes for rest of tiers....Will have same two colored cupcake icing on them. ... my questions are: 1. I would like to make sure cupcakes keep their moisture and freshness along with the icing. .. overnight. .. till her party at noon. Can I freeze both cupcake and icing without doing damage to either one? If so...how long to defrost? Is it safe to freeze icing? Will it stand up? 2. Or. .. how do I keep everything fresh and avoid cupcakes drying out? Should I wait to apply icing on cupcakes tomorrow or is it ok to do this today? I want to try to avoid rushing tomorrow as there are a ton of stuff to do to prep before party. Any suggestions or ideas are appreciated.
