Ok choccy lovers, listen up... Heres the recipe for the chocolate and chestnut cake I made yesterday!! This is a Hugh Fearnley - Whittingstall recipe... You need: 250g of dark chocolate (I used 200g dark chocolate and 50g milk) 250g unsalted butter 250g cooked and peeled chestnuts (tinned are fine) 250ml milk 4 eggs (yolks and whites seperated) 125g caster sugar Gently melt the chocolate and butter in a pan Gently bring the milk to just boiling and add the chestnuts (tinned or otherwise). Mash thoroughly, or process to a rough puree) Seperate the egg yolks from the whites, mix the yolks with the sugar, and whisk the whites until stiff stir the melted chocolate and the milk and chestnut puree in with the egg yolks and sugar then fold in the egg whites gently Pre heat your oven to 170 degrees C/ gas mark 3 Using a little butter, grease a 25cm springform cake tin, add the mixture and bake for 25 to 30 minutes I cooked mine for about 35 minutes It should have a slight wobble to it, and can be served warm or cold - I served mine cold with some single cream It will be soft and moussey I also added some crushed hazelnuts to the melted chocolate YUM!!!
