Ok ribs were a success. For those interested. Marinate overnight in a mixture of fresh rosemary, thyme, parsley, and sage. Hey it worked in a song. Add juice of 5-6 limes. Salt and pepper. Start to mix and pour in olive oil(extra virgin). Once a nice liquid consistence. Pour into a 2 or 3 gallon zip lock bag. Add beef back ribs. As you close bag get all the air out. Rub the meat ( stop it ) a couple of times leave in the fridge over night. Next day put on the grill low heat. Watch for flare ups because of the olive oil. Have a cup of water close buy to put out the flames. Start flesh side down until seared. Then flip and Let continue to cook. Slow. After about an hour at 250-300 finish with favorite BBQ sauce. Came out great
