Okay, I have been waiting for like... 5 years to make my own ice cream. My father and mother-in-law bought me a KitchenAid 6000HD for Christmas (I cried, seriously) and my brother-in-law gifted me the ice cream machine. This was the first time I have made anything in it and I am so excited for all of the things Ill get to make in the future. Springtime food blog, cough cough! Im going to enjoy this little bowl of soft serve and watch the documentary Happy and Fed Up - #NerdStatus. I love me some documentaries! Kelley’s Chocolate Walnut Non-Dairy Ice Cream Ingredients: 1 can (13.5oz) full fat organic coconut milk 1c unsweetened vanilla almond milk 3tsp pure vanilla extract (I use Madagascar Bourbon) 1/2c raw sugar 1/2tsp xanthan gum 1c unsweetened cocoa powder 1/2c-1c dark chocolate chips 1/2c chopped walnuts *omit for allergy Blend all of the ingredients except the chips and walnuts. Refrigerate for 2-3 hours, covered. Once chilled, add the chips and walnuts, mix, and add to your ice cream maker. I blended for 30 minutes. It will be soft serve at first, so for a harder “ice cream” consistency, freeze! This is a VERY good recipe and I can almost 100% guarantee you or your kids won’t even notice it isn’t cows milk. It’s cheap to make and DELICIOUS! Enjoy!
