On our Specials board in the Butchers this week we have Goose Skirt-for those who like their steak on the rare side this is ideal, especially on the BBQ Marinated Goose Skirt Steak Serves 2 400g Goose Skirt Steak For the Marinade 50ml Olive Oil 1tbs Balsamic Vinegar 2tbs Pointer Butcher Dry Rub Place steak in shallow oven dish, mix all of the marinade ingredients and massage onto the steak. Cover the dish and leave in fridge for a minimum of 4 hours, the longer the better. Heat a pan until very hot, do not oil the pan! Place steak in the pan and allow a couple of minutes each side for medium to rare. Allow the steak to stand for a couple of minutes off the heat, then slice across the grain with a knife at a diagonal angle, with slices 1.5cm wide. Ideally served with chips and seasonal salads, or as a steak sandwich. Enjoy!
