On our journey to better health we found a tuna salad to die for...not from (sorry) ...dressing of 2 tbs dijon mustard, 2tbs greek yogurt, 1/4 c olive oil, 3 chopped anchovies, 1/2 cup chopped parsley whisked together, 2 cans tuna drained, 1 chopped red bell pepper, 1/2 chopped red onion all tossed in the dressing. The recipe was for sandwiches on crusty bread made ahead and refrigerated with a weight sat on the sandwiches. We used a fresh baked whole grain baggette .We made 4 6" sandwiches for tomorrows brown bag lunch and had a bunch left, cody and emily liked it so much, they ate the rest with sour dough bread!
