On several occasions today, various family members opened my refrigerator, and my cabinets, and declared there was no food. I did not go shopping and yet we are stuffed. Hmmm.... I stuck one huge sweet potatoes in the oven, and while it was cooking I simmered saffron threads on the stove. After a half hour..I added turmeric, cinnamon, garlic and shallots to the simmering saffron...put in two cauliflower florets chopped up..and simmered some more...and then chopped up a slice of onion and a bit of bell pepper, half a tomato, and some limp parsley...minced finely, added a few drops of lemon extract and two table spoons of olive oil...shook it all together in a small container and set in the fridge. Went back and poured half a cup of jasmine rice into my simmering spices....turned my potatoe over...and poured a glass of wine. Finally...when the yellow rice was done...uncovered and let set...stripped about twenty leaves of spinach from the crisper and sauteed in raspberry. Melted brown sugar in butter and fixed plates. Savory yellow rice and cauliflower topped with spicy lemony peppers and tomato...flesh from sweet potato formed into patties with brown sugar drizzled over, raspberry spinach and roasted garlic. Beautiful plate, delicious food, house smells amazing, and every one is stuffed with crazy nutrients. Savory, sour, sweet, and a variety of texture and color left everyone satisfied and no one poking around for dessert. Entire meal made from bits and pieces of left over stuff..the stuff people throw out cause they think they will not use it...and my spice cabinet. There was even a bit of rice left over when we were full...Greg started to toss it..but I mixed the rest of the brown sugar butter in and stuck it into the fridge. I will brush it with yogurt and fry it up for breakfast. Entire meal...less than $3.00 worth of ingredients. But we had nothing to eat. Folks do not remember. that there was a time when there was not a grocery store around the corner...and town shopping happened infrequently. There is always something to eat.if you stop looking for boxes and cans.
