On the 7th day of Christmas, my Cheesemonger gave to me; LEtivaz made in September 2013. As you can see from the tender loving care & admiration our Cheesemonger is giving this cheese; it is the King of Kings for cheeses from Switzerland and deserves its place at your Christmas table. LEtivaz is made using unpasteurised alpine milk from cows who are by law only allowed to graze on fresh grass at least 1000m above sea level and made to an ancient recipe that includes the ritual of warming the curds in a copper cauldron over a wooden fire. It has a full flavour reminiscent of smoked nuts with hints of floral and vegetable notes and an underlying sweetness. Its texture reveals a crunch from the development of calcium crystals and its the complexity and richness of this sensory experience that will have you sit in wonder as you graze on slivers of this cheese paired with your favourite natural wine from the Jura. We have received 3 wheels of LEtivaz and cannot wait to share its beauty with you.
