One of my favourite things about festive eating are the random combinations of dishes that you can justify putting together just because .... 1. youre having a tipple or two and start craving funny things 2. Theres an abundance of leftovers or 3. just because its Christmas and anything goes. Tonight it was a little from a and little from c. Cous cous and pomegranate salad, cheesy quesadillas and beer soaked sprouts in coconut and ginger. It shouldnt work but it just does. 1 cup of cous cous to 1 cup of boiling water. Cover and set aside for 5 min. Add pomegranates, mixed nuts, scallions, mixed beans a squeeze of lime and a sprinkle of salt and pepper. For the quesadillas. Too delicious to be this simple. Pop two slices of art of zens violife cheese onto a flour tortilla. Fold and place onto a hot pan heat until browned flip and repeat. Remove, slice and devour. Oh so gooey and scrumptious. For the sprouts: Into a pan pop the following 1/2 a bottle of tiger beer (its vegan friendly) 1/2 a can of coconut cream Grated knuckle of ginger Handful of chopped sprouts Salt, pep and tiny squeeze of agave. Bring to the boil, reduce and let it do its thing for 20 min. For non sprout lovers this will be an abomination but its pure heaven for me. Ha ha. Night.
