Our head chef John has decided to share his Damson jam recipe: Ingredients: 8lb damson half pint water 8lb jam sugar Method to the madness: 1) pick over and remove any stalks 2) wash and wipe Damson 3) place the Damson and water in a pan, allow to simmer until the fruit is soft, Occasionally pressing the fruit against the side/bottom of the pan to help release the stones. remove the stones from the pan as you go. 4) add the sugar to the pan, keep stirring until it has fully dissolved. 5) allow to boil for around 10 minutes until the jam is set 6) remove the remainder of the stones and any scum that may have formed 7) put in to jars and seal while the jam is hot This will make around 12lb
