**Oyster Omelette – 蚵仔煎 (Hézǐ jiān)** Ingredients For the oyster omelette: 8-10 small raw oysters 蚵仔 1 stalk of Chinese cabbage 生菜 4-5 stalks of Asian chives 九菜 salt and pepper 盐和胡椒粉 2 tsp of sugar 糖 1/2 tsp of sesame oil 麻油 2 eggs 鸡蛋 1/2 cup of water 水 1 tbsp of sweet potato flour 薯粉 --- For the sauce: 2/3 cup of water 水 1 tbsp of miso 3 tbsp of sweet chili sauce 2 tbsp of ketchup 1 tsp of brown sugar 2 tsp of sweet potato flour Instructions 1. Start by chopping the Chinese cabbage and Asian chives into small pieces. Combine 1/3 cup of water with 1 tbsp of sweet potato flour and mix. 2. Heat a pan on high heat and add the vegetable oil. 3. Put the raw oysters into the pan and season them with salt, pepper, sugar, and sesame oil. Cook for about 4-5 minutes. 4. Add the Asian chives and cook for about 1-2 minutes. 5. Create a well in the middle and crack two eggs into the pan. Break the yolks and allow ingredients to cook for another 2 minutes. 6. Put the Chinese cabbage into the pan and cook for another 2 minutes. 7. Next, put the sweet potato flour and water mixture into the pan evenly. Allow the flour to become translucent and then flip the omelette on itself. 8. Now, lets make the sauce. Mix 1/3 cup of water and 1 tbsp of miso paste in a small pot and allow it to come to a simmer. 9. Add the sweet chili sauce, ketchup, and sugar. Mix well. Combine 2 tsp of sweet potato flour and 1/3 cup of water. 10. When it comes up to a simmer again, put the sweet potato flour in and mix for another minute. 11. Drizzle the sauce over the omelette.
