PAD THAI SAUCE This simple Pad Thai sauce recipe is basically exactly the same way that we do ours and recommend to do so in our recipe book. The only difference is we advise to taste after the sugar has dissolved and add 1 or more of the ingredients to achieve the desired taste. Tamarind can be a little variable in taste/sourness so maybe sometimes more or less is needed. It can last a couple of weeks in the fridge and can also be used as a multi-purpose sweet & sour sauce. We also use this same sauce for Deep-dried shrimp with Tamarind. Just garnish with some sliced (large/non-spicy) chillis, coriander and some crispy fried shallots. Thanks Temple of Thai for this.
