PCs Home Kitchen : Middle Eastern Jalapeño poppers Necessity is the mother of all invention they say ! Girl friends coming for a girls night . Need to make vegetarian bar snacks but dont have too much time . I opened the fridge to get inspired and spotted a stack of Green mirch I had bought to make Aachar . Thought of stuffing them cheese and frying but the girls watch their waists :)) So decided to keep the crunch and the creaminess while avoiding the calories . So were born the Middle Eastern inspired poppers . Pretty and bejeweled but with character and a kick much like our gang of girls ! So these are dedicated to the Learning Tree Gang . INGREDIENTS Ten whole Jalapeños : try and make sure they are similar size for pretty plating . Also need to be rounded so that have a cavity that can be filled . Filling : These are approximate quantities . You can change as per taste and availability . Hung curd -about three fourths of a cup . Tahini -half a cup Pomegranate Molasses - one teaspoon and a half Roasted cumin powder and salt Garnish : Fresh Pomegranate seeds - half a cup . Pine nuts half a cup Zataar METHOD Wash the jalapeños well . Then slit them in length . Deseed . Soak in water for five minutes . Now transfer to a bowl with vinegar . Leave for minimum 30 mins while you get the filling ready . Or if you have time for an hour . Remove wipe clean or wash them too to take away the vinegar taste . Dry and chill in the fridge . For the filling mix the hung yoghurt and the tahini . Season with salt and roasted cumin powder . Add pomegranate molasses . Taste , it should have a creaminess with a dominant sesame taste with a hint of the molasses coming through . Fill in the jalapeños . Garnish with the pomegranate rubies and the pine nuts . Sprinkle the Zataar on the top . Chill and serve with some sparkling girl conversation ! Variations : You can fill with hummus also Or replace the hung curd with any soft cheese , leave out the Tahini and add chopped herbs .
