PEARL MILLET IDLI (JOWAR-SORGHUM) Ingredients: 1¼ cup Pearl millet 1 cup Idli rice 1/3 cup whole skinned black gram(urud dhal) ¼ cup cooked rice Salt - to taste Water - as required Method: Soak the pearl millet for 8 hours or over night. Wash and soak black gram and idli rice seperatly for 2- 4 hours. Water level should be 2 inch above the rice and black gram quantity. After 4 hours or when you are about to grind all the ingredients, wash pearl millet well and drain the water completely .Pearl millet should look moist and there shouldnt be any water in it. Now, add soaked rice and black gram and cooked rice to the grinder and grind it by adding sufficient quantity of water. Meanwhile, take the pearl millet in a blender and make a powder of it without adding water. Add this powdered millet to the grinder and continue grinding it, till it reaches the idli batter consistency. Add salt to taste and ferment it for 6 to 8 hours. Pour spoon full of batter into greased idli mould and steam in an idli steamer for 20 25 minutes . Serve with coconut chutny Notes: Do not ferment the batter for more than 8 hours. Usually it tend to ferment quickly. So check after 4 or 5 hours and keep it again for fermentation if required.
