Packing lunches is a fabulous way to go. Start with dark leafy greens, add in fruit and veggies for taste and nutrients, add a protein like eggs, chicken, or ham, diced 1 oz of cheese, and finish with nuts or seed for texture. Use red wine vinegar or lemon juice OR hummus for your dressing. Switch it up by varying your add ins, just remember to hit all these groups of foods: dark greens, fruit, veggies, protein, dairy, nuts/seeds:) Hint: make a half dozen hardboiled eggs on the weekend to add to your salads all week long, and grilling meats AND onions add a new layer of flavor. Here are two of my favorite salads that I made when I first started this journey.
