Paleo Monday (day late...again). From CrossFit Perimeter Member: Stacey Geer (thank you!) Paleo Italian Meatballs 1 pound ground veal 1 pount ground pork ¾ pound ground beef ½ cup almond flour 4 cloves garlic, minced 1-1/2 teaspoons of dried bail 1-1/2 teaspoons of dried parsley 1 teaspoon dried oregano 2 teaspoons sea salt 1 teaspoon freshly ground black pepper 1 teaspoon red pepper flakes (optional) 3 large eggs, beaten 6 cups of your favorite no-sugar added Italian sauce 1. Preheat oven to 350 degrees 2. Line a baking sheet with parchment paper or non-stock aluminum foil 3. Place all ingredients in a bowl and combine lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs (about golf ball size). 4. Place the meatballs on the baking sheet and put in the oven for 20 minutes. 5. Prepare your favorite sauce in a large pot. When meatballs are done, put in the sauce and set to simmer for one hour or more.
