Patatas Bravas (Fierce Potatoes) 1 Large Onion 3 Large Tomatoes 3 Cloves of Garlic 1 Chili Pepper 1 tbsp smoked Paprika 2 Bay leaves Salt Pepper Olive Oil 4 Large Potatoes 1. Bring a pot of water to a boil. Peel the 4 potatoes and cut them into cubes. Add cubed potatoes to boiling water, cook potatoes till the tip of a knife slides in. remove potatoes, place them on a rack and let them cool down. 2. Heat a narrow pan with olive oil. Chop garlic cloves, add the garlic and chili to the oil and brown. Cut Onion and tomatoes into cubes. Once the garlic has browned (not burned) add onion and blanch. Add tomatoes and bay leaves reduce heat, cook tomatoes till they turn to liquid. Add Paprika and stir. remove tomato mixture from stove and let it cool down, a blender or hand blender will be needed to liquify mixture. Set aside. 3. In a fryer or pot heat oil and fry potatoes till they become golden brown and crispy. Place potatoes in a bowl with scott towels to remove excess oil. 4. Serve potatoes and pour some tomato mixture over it. (If you like it Spicy dont be shy to add extra chili pepper). Enjoy.
