Pea and Haloumi fritters (from delicious magazine) Boil 250g frozen peas for 2mins, rinse under cold water. Puree half in processor until smooth. Whisk 1/2 cup milk, 2 eggs, 30g cornflour, 1/2 tsp baking powder and pureed peas in bowl. Fold in remaining peas, 250g haloumi cheese cut into 1cm cubes, 1tbsp chopped mint, s+p. Add tablespoons to hot oil and fry until golden. Drain on paper towel. Serve with lemon wedges.
