People asked about cake pop parve candy melts recommendations. I have a online kosher certified custom cake pop business @thecakepopshopee located central nj but i originally hale from Brooklyn. Here are my 2 cents about parve candy melt options for cake pops. there are about 4 different coating options. 1. Leibers/ shuffra decorating bars is ok for chocolate molds and lollipops but not the best for cake pops. 2. White chips from leibers bakers choice i dont recommend Oppenheimer because it burns very easily. You can melt down the white decorating chips but they can burn easily even in a microwave, also the chips contain ingredients in it to prevent it from losing its shape and melt. For melting it need lots of shortning to thin out but too much cristco and the chocolate is a mess. 3. Gefen makes melts called wonder melts not my favorite option but I find the texture is waxy and its not easy to melt but its pretty easy to find. 4. My perfered product and no i dont get any $ for it is a product called golds confections ez melts a subsidiary of Le chocolate. This Product melts Beautifully and coats very well and comes in at least 12 colors including black, silver, and gold. I have worked with all types of products including the non cy options like wiltond, make n mold, and the upscale gourmet guittard. chocolate is very temperamental and cake pops are very labor intensive and could be tricky to make and dip. I was in boro park sunday by gourmet glatt BP and they had the full line of golds ez melts and all the above options.
