Pickling School Is Next Week in Clay County! It’s not too late to sign up! We need 7 or 8 more people. The Extension Office is hosting an Acidified Foods Processing School (a.k.a. "Pickling School") on July 16-18th from 8 to 5 at the Brasstown Community Center. The cost of the program, as advertised across the state and region, is $450/person for the 3 day certification. Cost for Clay & Cherokee County residents, which will require verification of residency, is $350/person. There are also scholarships available to assist local residents in further lowering the cost of the school to $175. WHO SHOULD APPLY? Only those wanting to produce low acid foods such as pickles, salsas, other foods containing vinegar. Those wanting to produce only jams & jellies DO NOT need this school or certification to do so. There are other regulations regarding jams & jellies, but you do not need this course.
