Pizzas can be a healthy option for any day part if that crust is thin made with spelt or a wholegrain organic flour. A coating of intense fire roasted herbed tomato sauce, a plethora of produce and a light sprinkling of hard or tofu cheese makes for a super vegetarian meal. I add scrambled tofu or free range eggs for breakfast, rocket or bruschetta pizza for lunch and a fruit pizza with a Linzer torte crust for dessert. In fact, I wrote for Pizza Marketing Quarterly for years until one year I was invited to Italy to be a judge for the worlds best pizza contest.Two of my own pizzas had placed in the Las Vegas contest and I wrote articles on pizzas I researched wherever I travelled.
