Pork Medallions with cheesy potatoes Comfort food all the way!!! This is an old fashioned dish that I love and tweaked. Garlic, onion, cream, sirloin Pork chops and cheese in one dish. It is savory and delicious. Ingredients 4-5 sirloin pork chops cubed 4 Tbsp butter divided 7 russet potatoes medium- large size 1 large onion sliced and halved 4 clove chopped garlic 1 Tbsp plus 1 tsp soy sauce 1/2 tsp dried dill weed 1/2 tsp dried rosemary or 1 sprig fresh needles pulled off 3/4 tsp garlic salt 1/2 tsp thyme 1/2 tsp parsley flakes 1/2 tsp ground black pepper 1 c heavy cream 2 c mozzarella cheese 1/2 lb optional- bacon cooked and crumbled Directions 1 (Optional -Cook bacon. crumble and set aside.) Peel potatoes and chop in to quarters or 6ths depending on the size. Place in salted water and boil. cook until done but still firm. (not falling apart) 2 While potatoes are in cooking. Cube the pork in to 1-2 inch chunks 3 On med high heat melt 2 tablespoon butter. Add pork and cook for 10 minutes stirring to cook. Add soy sauce and cook for 2 minutes stirring with spatula. Remove pork to a platter cover with foil. Heat oven to 400 degrees. 4 In the pan add 2 tablespoons butter. Add onion and cook until done. Add garlic and sauté with onion for 1 minute. Do not brown garlic. 5 Potatoes should be cooked. Drain potatoes. Toss potatoes with Garlic and onion. Heat cream in microwave until it boils. Pour over potatoes. 6 Add the herbs and Garlic salt and pepper to potatoes. Toss gently. Pour in to a 9x13 pan. 7 Top potatoes with pork. Place in oven covered. Bake for 20 minutes. After 20 minutes sprinkle with Mozzarella. Place back in oven uncovered. Bake about 20 more minutes until cheese is melted in nicely. Sprinkle crumbled bacon over dish and Serve!
