Pork, with Butter Chicken Sauce, and vegetables.... this was supposed to be Apricot Glazed Pork from Bob Wardens book Great Food Fast, but ran out of apricots, so did a rethink.... the pork was almost 3 lbs, and was easier to brown in pan, used a little oil and butter, seasoned with salt & pepper, added to PC. added 1 cup chicken stock, thyme, and half a bottle of Butter Chicken Indian Sauce I had in the pantry....cooked for 30 mins in PC, let it vent on its own for 10 mins, then released the steam, added onions, carrots, sweet potatoes, checked seasoning (yum) and cooked for another 10 mins, let it steam naturally, then released steam. Moved the Pork and veggies to a bowl, then 1 tablespoon all purpose flour (I use Wondra) in half a cup of cold water in small bowl, whisk until lumps absorbed, then slowly add to juices and stock in the PC and whisk, simmer (without lid) and whisk until the juices thicken to desired consistency...... This was so flippin good, and just goes to show that you dont always have to have all the ingredients in a recipe for it to turn out brilliant ! Loving the cool kitchen, and just a few dishes to clean up.... Happy cooking !
