Prepare your senses for this AMAZING farm-fresh meal at Brightons Farm to Table Experience: Our international tour will begin with the Growers Gathering at 6:00 p.m., a short program and reception where guests will have the opportunity to mingle with our local farmers and artisans to learn more about how they produce our wonderful products. A pair of appetizers, an earthy caponata representing Italy and a Michigan smoked fish canapé, will be paired with local wine, beer and cider. The seated portion of our evening will begin with a savory baked vegetarian empanada from Central America and will be accompanied by locally produced salsas and vegetables. The pasta course, representing American modern cuisine, will feature handmade fresh pasta consisting of locally milled flour and farm fresh eggs. It will be accented with a surprise pesto and grilled fall vegetables. A locally provided focaccia and roasted local garlic will accompany this vegetarian course. Our first entree dish will have a Mexican flair and feature spit-roasted pork mole, seasoned with Mexican herbs, and will be served with warm locally made tortillas. A bright corn pico de gallo will go along. The second entree course will be slow-cooked and seasoned with cumin, coriander, oregano and Aleppo pepper. It will be served in a traditional fashion with exotic tahini sauce, roasted onions and pickled turnips; served over rice. A Lebanese fatoosh salad with local greens, cucumbers and tomatoes will highlight this leg of our trip. Finally, we will travel to France for dessert with a spiced apple cake highlighted with lavender cream. Totally Provence!
