Preparing for two weeks away provided opportunities to test some ideas that have been fermenting for a while. Dry, packets bread mixes (my own recipes), dried natural leaven, and the only personal tools: a probe thermometer and an oven thermometer. Challenges: - much higher day time and night time temperatures than I am used to working with; - an old, seldom used oven; - big family gatherings, so little opportunity to plan for baking. By the third bake things are beginning to look right!
