Pumpkin Roll ~ 1 -1/2 c, sugar, 1 canned pumpkin, 4 eggs, 1 c. flour , 1- 1/2 c. flour 1 -1/2 tsp. baking soda , 1/2 tsp. salt. FILLING - 1 -1/4 c. powdered sugar, 1 - 1/2 teaspoon vanilla, 3 Tablespoon butter, 12 ounce softened cream cheese, Cake pan ; 15X9- 1/2 X 1 - 1/4 inches. Mix together sugar, pumpkin and eggs. Beat 3 minutes. Add flour, baking soda and salt. Mix well. Grease jellyroll pan, then line with waxed paper. Spray Pam onto top of waxed paper to help remove the baked cake. Spread batter evenly in pan. Bake at 375 degrees for 13 to 15 minutes. Cool in pan 1 minute. Sprinkle terry cloth or kitchen towel with powdered sugar, then flip onto towel. Removed waxed paper and roll with towel Cool 1 hour Soften butter and cream cheese, not too soft. Then mix well. Unroll cake and spread cream filling. Re-roll, sprinkle with powdered sugar and store in refrigerator.
