Pure dairy hot off the press... Goht me ah baeeked ree-coh-ah (say it Cockney, like). Cor blimey. Wot? This is a really easy and popular thing to make for staff lunches, afternoon teas or a yummy breakfast. Slice it loaf-like, cake-like or turn out of silicon cupcake moulds for individual portions. Recipe: Mash ricotta cheese (the proper kind in the plastic sieve from the deli, not the gooey slush out of a supermarket tub) in a large bowl. Mix in a generous amount of good quality EVOO, finely chopped fresh herbs (I used my homegrown thyme and parsley tonight) and Himalayan salt to taste. Bake on low heat (so olive oil doesnt oxidise) till edges are crispy. Turn out of baking tin and serve with extra EVOO drizzled on top. Thats. It. Damned shame I cant actually eat it (got the whole 30 blues tonight)... Got the tick of approval from my resident taste tester, aka the boy. ;) Whos found ricotta without the acidity regulator added? Do tell!!
