Q. & A. | Chef Richard Sandoval gives us the insider on his latest Restaurant in Denver || La Biblioteca We are thrilled to share with you the latest addition to the Riverfront neighborhood, La Biblioteca. A concept created in New York City by Chef Richard Sandoval. Sandoval is a renowned global innovator in Contemporary Latin Cuisine. The menu featured in the Riverfront neighborhood is a Latin-Asian cuisine, with dishes created to share. This allows for you to try many unique creations on just one visit! Each guest has the opportunity to keep a loyalty card kept on file in the card catalogue offering incentives for trying various tequilas in the library. Richard has chosen his personal favorite tequilas to offer in the Library of Tequila. The drink list will feature over 350 tequilas, draft beer and handcrafted cocktails. This Saturday, November 9th doors will open for the masses. Be the first. 1) What most excites you about bringing La Biblioteca to the Riverfront neighborhood? La Biblioteca will bring an edge to the neighborhood that wasnt there before with over 350 tequilas, a library program for regulars, and a brazen sense of style that will set us apart. 2) A guests first time in, what are the two must have dishes? I think Id start with our Ceviche Nikkei, which is inspired by Peruvian cuisine and features a medley of fresh ahi tuna, ponzu, avocado, sweet potato and nori. I also love our Mini Banh Mi Dog Sliders, which have mini beef and pork hot dogs we make in-house served with chicken pate, pickled vegetables, Serrano chili, cilantro and a spicy mustard. 3) Insider drink? Were very excited to have an experienced mixologist on hand in manager Jason Hayes, who not only makes himself available most nights to educate our guests on our many tequilas, but is happy to create specialty drinks upon request. 4) Are there any unique changes being made to this location that will differentiate itself from the New York location? Weve made every effort to replicate the interior design which was successful in New York, but have made some tweaks to the bar program to best acclimate to the Denver market. Our Denver location will have more emphasis on craft beers and will also feature eight house-infused tequilas using fresh ingredients. Salud!
