QUINOA: en.wikipedia.org/wiki/Quinoa FROM DONNAS EXPERIMENTAL KITCHEN 0 COOKING : We are finding more & more of quinoa in the foods marketplace. The Wikipedia describes where quinoa comes from and the nutritional importance of this fine grain. Because I am trying to take away some of the gluten & sugars products, add more protein out of my diet, I have been trying to eat quinoa to supplement and find it a great energy builder to my own system. (I cannot attest to anybody else about quinoa, just dont know who is using it besides me yet.) Today, natural sugar and beans were on my mind and experimenting is my quest in life too. This is an experimental recipe that really tastes quite good: Dried beans, peas, lentils: 2 cups soaked 12 hours in pan of water & then drain water & rinse while in sieve. Pour rinsed beans into pot of water (one tsp. salt of choice); add 3/4 cup pre-washed quinoa (follow package suggestions); bring beans/quinoa to par-boil (has white foam on top of hot water cooking) & turn down heat to simmer; continue to cook until all are soft. Let it sit to come to where you can handle the heat; then pour into wire basket and pour off water (if you think you can use the stock / water, then pour the bean/quinoa water into container & save in refrigerator). Pour beans/quinoa (no water) into a rectangle casserole dish & set aside to wait for the sauce mixture (recipe follows): Sauce Mixture: Prepare flavors to pour/stir into the beans/quinoa s: 3/4 cup Tart Cherry Juice concentrate Dried fruit one cup (I used white raisins but if you have dried cherries, that would be even better) one small can tomato paste pats of no-salt butter 1/2 cup Whip these together. & pour on top of beans/quinoa that is in the casserole dish & swirl it into the mixture of beans/quinoa. {The Cherry concentrate I use is from Brownwood Acres Food, Inc., Eastport, michigan 49627 (located 4819 US Hwy 31); the cherry is unsweetened / natural. At one time, I saw on the label the cherries concentrate was shipped in from Turkey, so i am not sure the cherry is from michigan on this product i used now as it does not indicate on the label where the cherries came from. We enjoy this cherry concentrate on many foods, such as yogurt; and also in water one tsp. to 8 ozs is a fine drink & healthy.} Okay, the oven is at 300dF and the cherry/quinoa/bean mixture in place in the oven....one hour and you will begin to smell the cherry & that is when you can enjoy eating this. It will seem unusually delicious the combination of cherry - quinoa is totally different to your palate but the bean mixture will satisfy in a way with the quinoa is quiet like an unsweetened tapioca (small pearls). I ate a cup full and enjoyed it all, especially because it had not white sugar in it & the cherry concentrate made it a good choice for me. I know I have lost most of your to your restful sleep by now, but if you are dealing with no sugar diets with lots of protein, eating quinoa may help.
