Quinoa Salad 1/4 cup extra virgin olive oil 2 1/2 Tablespoons apple cider vinegar 1/2 teaspoon salt 1/8 teaspoon cinnamon 1/8 teaspoon ground cloves 1 shallot (finely chopped) 1 cup quinoa (made with vegetable broth) small to medium eggplant 1 honey crisp apple 3/4 toasted walnuts 1/2 cup dried cranberries bunch of lacinato kale Cut eggplant into bite sized squares. place on baking sheet and drizzle with olive oil. Mix with hands. Add salt and pepper. Roast at 400 degrees for about 30 minutes. I also added some butternut squash to the pan cook quinoa (1 cup dried quinoa, 2 cups vegetable broth. cook on high until it reaches a boil. Stir. Lower heat to low and put cover on pan. Cook until broth is gone) Wisk oil, vinegar, salt and pepper, cinnamon, cloves. Stir in shallots Cut kale and apples into bite sized pieces and add to dressing. Add eggplant (and other roasted veggies of choice) and cranberries to quinoa. Add in dressing mixture and nuts.
