Quinoa is a tasty superfood that is high in protein, high in fiber, gluten free and contains many nutrients! Its quick and easy to make too- just add water and boil! This is seriously one of the best quinoa salads I have had- once again, easy to make! Mediterranean Quinoa Salad Ingredients: 1 cup uncooked quinoa- prepare according to package directions- Let cool completely. (*uncooked Quinoa should be rinsed and drained before cooking) 1/4 cup red onion, diced Juice from one whole lemon. 1/4 cup kalamata olives, pitted and sliced 2 tbsp extra virgin olive oil or regular olive oil. 2 cups cucumber, peeled and diced (from 1 English) 1 cup cherry tomatoes, quartered 1/3 cup crumbled feta Sea salt and fresh pepper, to taste Combine quinoa, red onion, olives, tomatoes, cucumber and feta. Drizzle with olive oil and lemon juice last. Toss well. Sea Salt and pepper to taste. Enjoy!
