Quinoa stuffed bell peppers. Filling,full of protein, easy, yummy and VERY LITTLE calories! Boil some bell peppers for about 10-15 min, just to get it a little soft. Cook some quinoa,mix in cooked beans, tomatoes, spinach, chopped mushrooms, and seasonings! We usually use up left over veggies and chop em up to use in the mix. You can top with a little bit of shredded cheese too ;) Bake for another 15 minutes or until you think its done. Enjoy!
