Quite a few friends who have known me for a long time make comments along the lines of well you always wanted to be a chef, now youre finally doing it. but honestly I am uncomfortable with the term. To me a chef is a highly skilled multi-tasker who runs a brigade in a kitchen doing twelve services a week with a full menu and I know I wouldnt have a clue how to do that. At its busiest my team consists of three other staff knocking out 5 dishes for four hours. Dont get me wrong, its hard work but it probably doesnt compare. Im far more comfortable with the term caterer but then I know there are a lot of people working in local pubs who are happy to call themselves chefs and do nothing more than take ready meals in and out of a microwave. I know Im far better than that, making everything from scratch with a lot to my own original recipes. For the Digbeth Dining Club 2nd Birthday bash the other week I thought wed make a bit of a show and bought all my staff smart chefs jackets but I felt like a bit of a fraud in mine - Im far more comfortable in a T-shirt and apron. So to my fellow street food traders here is a question - Are you more comfortable with the term caterer or are you proud to call yourself a chef?
