RECIPE - Pulled Pork with Homemade Coleslaw For the Pulled Pork: Pork Loin Roast - 4lbs Onions- sliced - 3 Garlic Cloves- smashed - 3 Dark Beer - 2 bottles Worcestershire Sauce - 30ml Grainy Mustard - 30ml Apples- Large Dice - 2 Bay Leaf - 1 Peppercorns - 5ml Thyme and Rosemary - 1 sprig each Season Pork roast with salt and pepper then sear the top till golden brown. Place apples, onions, and garlic in the bottom of the slow cooker with the mustard, Worcestershire, herbs, and peppercorns. Place seared roast on top and cover with dark beer…. Should it not completely cover the roast, just add some water or chicken stock. Cook for 8-10 hours on low in the slow cooker, or 4-5 hours on high. For the BBQ Sauce: Apple Cider Vinegar - 1 cup Ketchup - 1 cup Water - 1/2 cup Onion - 1/4 cup Garlic - 2tbsp Butter - 2tbsp Molasses - 2tbsp Yellow Mustard - 2tbsp Brown Sugar - 2tbsp Worcestershire Sauce - 1tbsp Paprika - 1tbsp Mild Chili Powder - 1tbsp Dried Oregano - 2tsp Melt butter in saucepan and sauté onions and garlic until browned. Add the rest of the ingredients- Vinegar last—and cook on medium-low heat for twenty minutes. (Obviously, you don’t have to go through the trouble of making your own BBQ sauce, you can just use your old faithful BBQ sauce for this one!) For the Coleslaw: Cabbage—Shredded - 1 head Carrots—Shredded - 2 Pickled Onions-Sliced - 6-8 Salt and Pepper - to taste Mayo (I Like Miracle Whip for this) - 1/2 cup Grainy Mustard - 1tbsp Lemon Juice - 1tbsp Sugar - 1tbsp Cider Vinegar -1tbsp Combine all ingredients together and season to taste. Best when left to sit for a few hours! (Again, making from scratch—while delicious—is optional) Directions: Putting it all together ... Ok, so now that everything is all prepared, it’s time to build the most epic pulled pork sandwich you and your family will ever eat! Shred the cooked pork loin (be careful not to get any peppercorns in there!), and toss with the BBQ sauce… I like to add some of the apples and onions from the slow cooker into the mess. Pile high onto your favorite bun (or taco, or burrito, or poutine!) and top with some sharp cheddar and the coleslaw, and voila!! Easy, peasy pulled pork sandwiches for a chilly day that will warm you up in no time!
