RECIPE OF THE WEEK #1 - Victoria Sponge. Enjoy this classic family favourite this summer at the beach, park or just at home! You will need: 400g KTC Eggless Cake Mix, 220ml water, an electric or hand whisk, 2 x 6 inch cake tins, greaseproof paper, bowl and a spoon. 1. Pre-heat the oven to 175c (165c if fan assisted) Gas Mark 3. 2. Lightly grease the cake tins with a little melted butter and line with grease proof paper. 3. In the mixing bowl add the cake mix and water and whisk for 3-4 minutes until a batter is formed. 4. Divide the mix equally between the 2 cake tins. 5. Bake in the centre of the pre heated oven for 18-20 minutes until risen and golden. 6. Remove from the oven, allow to cook in the cake tins for 5 minutes, then remove from the tin and peel off the paper. Place the sponge on a cooling wire. 7. Sandwich the cake together with jam and buttercream and serve. Or alternatively, why not try some lemon curd, whipped cream, fruit or chocolate spread.
